Tuesday 4 August 2015

These simple little homemade Reece's peanut cups are great for keeping on top of that wedding diet but satisfying that sweet tooth. The recipe is very quick and full of completely natural and healthy ingredients but they don't last long! If you can spare ten minutes of your time and resist eating them for an hour then you will be truly addicted.

INGREDIENTS
225 grams of Peanut or Almond butter,
100 grams of desiccated coconut (optional,)
1 tablespoon coconut oil,
1 tablespoon honey,
225 grams of dark chocolate.

Makes 12 cups.

METHOD
Place your peanut butter, coconut oil and honey in a glass bowl and melt together over a saucepan of hot water or in a microwave for 30 seconds. Stir in the shredded coconut until combined and then divide and place into a mini muffin tray with 12 openings.

Place the chocolate chips in the glass bowl and melt. Pour the chocolate over each of the muffin tin openings and place in the fridge or freezer until set.

Carefully scrape a knife around the edge of each cup to pop them out and enjoy!
